Fall is around the corner!

Fall is a great time of year for Acorn Squash.  This squash can be served for a holiday meal or a Sunday dinner. It's easy to cook, and goes well with any main dish.  Check out recipes and other great info at Old Fashioned Tips.

Soup Weather!

SOUTHWESTERN BEAN SOUP
You have to try this recipe!   I love it!!!!
 This classic soup features ground beef, taco seasoning, and traditional Southwestern vegetables like corn, cilantro, chiles, and jalapeƱos. It's the perfect supper solution on chilly weeknights. For more Southwest-inspired dishes, see our full collection of Mexican recipes.
  Prep Time: 15 minutes
Cook Time: 45 minutes
Yield: Makes 6 servings

Ingredients

  • 1  pound  ground beef
  • 1  cup  coarsely chopped onion
  • 2  garlic cloves, minced
  • 2  (16-oz.) cans light red kidney beans, rinsed and drained
  • 1  (15-oz.) can black beans, rinsed and drained
  • 1  (14.5-oz.) can petite diced tomatoes and jalapeƱos, undrained
  • 1  (14.5-oz.) can diced tomatoes and mild green chiles, undrained
  • 1  (14-oz.) can beef broth
  • 2  cups  frozen yellow and white whole kernel corn
  • 1  (1-oz.) envelope taco seasoning mix
  • 1/4  teaspoon  salt
  • 1/4  teaspoon  pepper
  • 2  tablespoons  chopped fresh cilantro
  • Toppings: sour cream and chopped fresh cilantro

Preparation

1. Brown ground beef, onion, and garlic in a large Dutch oven over medium-high heat, stirring often, 10 to 12 minutes or until meat crumbles and is no longer pink and onion is softened; drain.
2. Stir in kidney beans, next 8 ingredients, and 4 cups water. Bring to a boil over medium-high heat. Cover, reduce heat to low, and simmer 30 minutes or until thoroughly heated. Stir in cilantro just before serving. Serve with desired toppings.

After you've cut onions into rings, dip them into a batter from prepared pancake mix and then deep fry. It will save lots of preparation time

Mediterranean Crescent Pinwheels

INGREDIENTS
1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls or 1 can (8 oz) Pillsbury® Crescent Recipe Creations™ refrigerated flaky dough sheet
1/2 lb prosciutto or cooked ham, thinly sliced
4 oz feta cheese, crumbled (1 cup)
1/2 teaspoon pepper
1 tablespoon olive or vegetable oil
6 tablespoons chopped fresh basil


DIRECTIONS
1. Heat oven to 375°F. Spray cookie sheets with cooking spray.
2. If using crescent rolls: Unroll dough; separate dough into 4 rectangles. Firmly press perforations to seal. Press or roll each to form 8x5-inch rectangle. If using dough sheet: Unroll dough; cut into 4 rectangles. Press or roll each to form an 8x5-inch rectangle.
3. Arrange 1/4 of prosciutto slices evenly over each rectangle. In small bowl, mix cheese, pepper and oil. Sprinkle mixture evenly over prosciutto on each rectangle. Sprinkle with basil.
4. Starting at short side of each rectangle, roll up; seal long edges. With serrated knife, cut each roll into 5 slices. Place, cut side up, on cookie sheets.
5. Bake 15 to 20 minutes or until golden brown. Remove from cookie sheets. Serve warm.
